Warm Veggie & Couscous Wraps

3 teaspoons olive oil
1 red bell pepper sliced into strips
2 small zucchini or yellow squash diced
1 small red onion finely diced
2 cloves minced fresh garlic
3 cups fresh spinach, green kale, or Swiss chard
2/3 cup vegetable or low-fat chicken broth
2/3 cup uncooked whole wheat couscous
1 teaspoon salt
½ teaspoon pepper
1 teaspoon dried oregano
½ cup freshly grated parmesan cheese or crumbled feta cheese
8 burrito-sized whole wheat or flour tortillas
To prepare the greens:
Wash the greens thoroughly to get rid of all the sand and dirt. Remove the stems and chop or tear into one inch pieces.
To make the wraps:
Heat a medium sized skillet over medium heat. Add the olive oil, onion and bell pepper. Cook 2-3 minutes. Add zucchini and cook an additional 2-3 minutes. Next add the garlic, greens, salt and pepper. Cook for 2 more minutes. Add the broth and oregano and bring to a low boil. There should be gentle bubbles. Pour in the couscous, remove skillet from the heat, cover with a lid or foil and let stand for 5 minutes. Remove the lid and stir in the cheese. Spread about ¾ cup of the mixture onto each tortilla and fold like a burrito.
