Veggie Chili Bake
with Cornbread Topping

Prep Time: 15-20 minutes
Bake Time: 35 minutes

Preheat the oven to 350° F

Veggie Chili: Combine the following ingredients in a medium-sized baking dish lightly coated with cooking spray.

1 onion finely diced
1 green pepper diced small
2-3 cloves fresh garlic, diced (more if you like it!)
½ cup chopped cilantro (optional)
2 cans black beans drained and rinsed
1 can small red bean drained and rinsed
1 28 ounce can diced tomatoes
Note: Use 3-4 fresh tomatoes if they’re in season they’ll be cheap at the Farmers Market! (July-September)

2 Tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons kosher or sea salt
½ teaspoon ground black pepper or a few grinds of fresh
½ teaspoon cayenne pepper or a splash of hot sauce (optional)
