Squash Bread
(Adapted from John Muir Recipes online)
1 cup whole wheat flour
1 cup unbleached all-purpose flour
1 tsp baking powder
1½ tsp cinnamon
1 tsp ginger
¼ tsp sea salt
1/3 cup canola oil
¾ cup maple syrup
½ cup soy milk or milk
1½ tsp vanilla
1 cup grated winter squash or pumpkin
1/3 cup Golden or Thompson raisins (optional)
1. Preheat oven to 350 degrees. Oil an 8-inch square baking dish.
2. In a large bowl mix dry ingredients.
3. In a medium bowl, whisk wet ingredients and squash.
4. Add wet mixture to dry and mix well. Add raisins and mix.
5. Pour batter into pan. Bake for 35 minutes or until breads tests done.
6. Remove from pan and let cool before cutting.
Makes 1 loaf.
