Spring Greens with Orange Dressing
(A COOKSHOP FOR ADULTS RECIPE)

Dressing:
 2/3 cup fresh squeezed orange juice (from 3–4 oranges)
 1 tablespoon soy sauce
 2 tablespoons olive oil or other vegetable oil

Salad:
 4 cups washed, dried, and chopped salad greens such as spinach, watercress or romaine lettuce
 1 small red onion, thinly sliced
 1/3 cup sunflower seeds

1. To make dressing, whisk together juice, soy sauce, and olive oil in a medium bowl or put in a jar with a tight lid and shake well.

2. Just before serving, toss greens, onion, and sunflower seeds in a large bowl with enough dressing to lightly coat greens.

Serves 4
