THREE BEAN SALAD
MAKES 8 SERVINGS
INGREDIENTS
1/2 pound fresh green beans, washed and cut into three pieces
2 rounded teaspoons Dijon mustard
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
1 (15-ounce) cans red kidney beans, rinsed and drained
1 (15-ounce) can garbanzo beans, rinsed and drained
1/4 chopped scallions
1/4 chopped bell pepper (any color is fine)
1/4 cup flat-leaf parsley, chopped
Salt and freshly ground black pepper
PROCEDURE
1. Bring a pot of water to boil. Add a teaspoon of salt. Cook green beans for 5 minutes.
2. Drain beans and run cold water over them to stop the cooking. Set aside.
3. In a bowl, combine vinegar and mustard. Whisk in oil. Add kidney beans, garbanzo beans, green beans, scallions, peppers and parsley. Mix well.
4. Season with salt and pepper and serve.
